THE RUM
Rum has been a premium crafted spirit in the Caribbean since the 1880s. Copper pot stills and the US market are initially what gave the rum market its international acclaim. Greater demand then continued from the UK and Europe.
Beginning in the famed dunder pits of Port of Spain, Trinidad and Tobago - a specialist premium grade rum is born in continuous column distillation, with only the highest grade sugar cane molasses being used in a near 200 year old refined process to prepare our sublime spirit.
Bespoke wood management of Bourbon casks, coopered in house at the Trinidad & Tobago distillery, picked not just for quality but the wood reaction to the spirit refining and enhancing the sugar cane spirit to make the world famous Amber Rum
The Outlaw blend is a cask aged Rum of minimum 3 years, but has a mix of 5, 7 and 10 year rum to give the richness and outstanding taste profile. Bourbon ageing brings out the liquid gold we need to enrich and add texture using our traditional cask maturation in Scotland.
Our unique maturation process is what gives our Rum its complex flavour and full, rich character. Hand picked casks from Speyside, Highland distilleries add additional regional characteristics, complimenting our already world class Rum.
NOSE: Sweet caramel, vanilla, with a subtle hint of toffee, melding into some wood and oakiness with a slight hint of sherry at the end
TASTE: Very smooth beginning of caramel, vanilla with some toffee and honey. Citrus then comes onto the tongue with satsuma orange portugal zest, leading into the longer finish of coconut some creamy butter notes with a hint of baking spice and raisin.

TASTING NOTES
The smoothest of blends takes its influence from first fill American oak Single Malt Whisky casks but is unlike their namesakes. Vanilla and citrus notes come forward, complementing the rums sweet fruitiness. In body, Outlaw is creamy and buttery, with slight hint of spicy yet subtle woody notes
Limited to just 983 bottles this is the inaugural bottling of our limited edition cask releases. Famed for strong distinctive peaty whiskies, we have used rare Islay casks to add an unrivalled finish to this rum.
NOSE: Wood fire and sweet caramel combined, peat and sweetness, moving to slight vanilla and a hint of toffee, melding into some oakiness with smoothness and mellow smoke / ash
TASTE: Not unlike the nose, very smooth combined of smoke beginning and caramel rich sweetness, vanilla and toffee. Then comes soft satsuma orange Portugal zest with some oakiness or wood and a hint of sherry. The longer finish continues the rich smoothness, smoke balanced with creamy or buttery notes with a hint of baking spice. There can also be some coconut right at the end.
